Shimmy

Shimmy, shimmy, shimmy to the break of dawn.

Pineapples. What was I supposed to do with pineapples? Well, I had to think of something, because here they were. Blending up a base of wild cider and Gala juice, I tentatively added the pineapple juice. It was good, really good, but it was just missing something… Acid. Now, as you know, I don’t add acid in any form other than fruit juice, and having no Bramleys, the only other option was lemons. Well friends, this was like the fire moment from a “Flaming Homer”! The acids pushed the pineapple flavour stratospheric and combined to create something truly remarkable. So pleased was I that this had worked out so perfectly, I did a little dance around the blending tank. A little shimmy, to be exact…

Few bands have had such a profound impact on me in my formative years as System Of A Down. Their “Toxicity” album was the first I had heard from them and I played it to death. Shimmy was always one of my favourites, so I named this cider after it.
